The People

After school in Canberra, Will Bruce set off to explore, learn and find his own path. A vintage at Eden Road Wines deepened his appreciation for fruit quality, individuality and the influence of place. Will eventually returned to the family farm in Murrumbateman, where, with partner Lauren, he is building on the
foundations laid by his parents, Rob and Sue, and shaping the next chapter of the Poachers Pantry story.

The Land

Tucked among the granite country of the Nanima Valley, Poachers Vineyard is a second-generation family vineyard shaped by the past eight years of thoughtful, organic practices under Will’s guidance. Its east-facing slopes capture gentle morning light, while the surrounding granite hills provide natural windbreak,
sheltering the Shiraz from the harsher afternoon sun. The result is distinctive Shiraz with depth, drive and restraint - expressive of both the site and its unique character.

The Wine

The 2025 Poachers Shiraz was hand-picked in the early morning, with the fruit divided across several ferments, from 100% whole bunch through to mostly destemmed, with indigenous yeasts allowing each parcel to develop its own expression. This spread of fermentations builds a spectrum of expression - from lifted violet and spice through to deeper fruit concentration and tannin weight. While more rigorous extraction (drain-and-returns alongside pump-overs) delivers firm, integrated tannins with real presence and longevity, and a lovely savoury undertone throughout. 

Each parcel then matured in French oak barriques for 13 months, before blending. Minimal fining and filtration allow the vineyard and vintage to remain at the heart of the wine.
