The 2024 “Poachers” is a layered and expressive interpretation of Shiraz, built through a thoughtful, small-batch fermentation approach to capture both vibrancy and structural depth. Fruit was harvested in the early morning from this east facing block that’s situated amongst rolling granite hills in the heart of Murrumbateman.

To build complexity, the fruit was split across multiple small fermentations, each handled slightly differently. A portion was fermented as 100% whole bunch, while others incorporated approximately 30% whole bunch, with the balance destemmed. This range of inclusion allows for a spectrum of expression—from lifted aromatics and spice to deeper fruit concentration and tannin weight.

Fermentations were allowed to proceed naturally with a mix of indigenous and selected yeasts. The whole bunch parcels contributed aromatic intensity—violet, spice, and stem-derived savouriness—while also shaping the tannin profile with a fine, structural edge.

Extraction was more rigorous, with the use of drain-and-returns alongside pump-overs to build mid-palate weight, colour, and structural depth. This approach ensured firm yet integrated tannins, giving the wine both presence and longevity while maintaining balance across the different ferment parcels. Fermentation temperatures were moderated to preserve perfume while supporting effective extraction and even development.

Each ferment was monitored individually and pressed at optimal balance, before being transferred to French oak barriques for maturation. The élevage program was designed to support integration, bringing subtle oak spice, texture, and polish without overshadowing the fruit.

After maturation, parcels were assessed and blended to achieve harmony between brightness, structure, and savoury complexity. Minimal fining and filtration were employed prior to bottling to retain site character and detail. The resulting wine is finely structured, aromatic, and textural, reflecting both the nuance of whole bunch fermentation and the precision of the MADA Wines
approach.
